Are raw food diets--those that include only uncooked foods heated to a temperature of less than 100 or so degrees Fahrenheit--just a fad or a path to healthful eating you'd like to follow? Find out for yourself at Pure Market Express, a prepared-meal service in Chaska (the shop is a small, deli-like storefront for drop-ins, or orders can be delivered). Some of the dishes they "cook," such as the mock mac and cheese made from zucchini noodles or the ersatz salmon of dehydrated carrots, are sad substitutes for the real thing, but others--raw cinnamon rolls (like a dense, date bar), Mexi wraps (kale with nut cheese), bacon jalapeño poppers (nut cheese and dehydrated eggplant chips), and tostadas (flax cracker with salsa) are all delicious and probably far healthier than their cooked counterparts.
