Captain’s Curry is the signature order at Singapore, but it’s also a tall order. The chef works with 27 spices in a big wok to create the dish ($11.95). The Nokomis restaurant still attracts a following from its old location in Maplewood, and popular choices include the Singapore rice noodles ($8.95) and the Ayam Gareng Berempah ($11.95), where the chicken is marinated in spices and then baked and stir-fried with veggies to create a spicy, aromatic flavor.
