Market Bar-b-que

Once upon a time, Minneapolis had a thriving vaudeville scene, and a big farmers' market on the edge of downtown where farmers would come and sell their wares, including their meat and poultry. Market Bar-b-que was the logical product of this confluence, smoking up farm products for vaudevillians and serving them till the wee hours; check the walls for signed photos of the many celebrities who have visited this downtown roadhouse over the years. These days, pitchers of beer flow between plastic trays heaped with richly herbal dry-barbecued chicken and lean, concentrated pork ribs served crisp and smoky to highlight the clean flavor of the meat.
