Perfecting each part of the intricate art of sushi making certainly looks stressful. So why are the guys inside the Sushi Fix truck having so much fun? With toasts of "Kampai!" owner Enkhbileg "Billy" Tserenbat and his crew brought Edo-style sushi to the streets of downtown Minneapolis. Edo-style sushi was served on the streets to the busy city dwellers known for having little patience. Not only is this a perfect business model for a food truck, this brand of sushi is exquisite. The rice is perfectly seasoned, and the seafood is incredibly fresh and tender. Creamy, bracing, salty, savory, and spicy — so many levels and layers of spectacular flavor are handed out of that truck. Beyond the fish, the truck serves some of the best seaweed salad found outside of the ocean. Whether you get your fix from the truck or the new brick-and-mortar restaurant in Wayzata, this is seriously great sushi.
