Minnesotans' history of pancake-eating goes back to the days when Paul Bunyan's legendary logging camp crew made flapjacks on a griddle so big it was greased by skaters who glided on bacon slabs. We love our pancakes in every possible permutation: made with buttermilk, sourdough, or cornmeal; studded with blueberries, chocolate chips, or wild rice. And we love them even more when they taste just like another one of our favorite breakfast treats, the raised, glazed doughnut. At Good Day Cafe, the famous glazed doughnut pancakes come in a Bunyan-size stack of four, topped with a ball of whipped butter and dusted with powdered sugar. Their flavor really does replicate that simple, childhood sweetness of pure vanilla and powdered sugar. The pancakes' texture is so soft that it's almost creamy, and they're light enough that each bite practically dissolves on the tongue. We don't know the fat content of that rich, fluffy batter, but we do know that Krispy Kreme can bite it.
