It's such a humble-looking thing, Rustica Bakery's bittersweet chocolate cookie: black as midnight and sprinkled with sugar granules that twinkle like stars against the night sky. Your first bite breaks through a crisp, delicate crust to reveal a brownie-soft center—something you can really sink your teeth into. Its rich cocoa flavor is just slightly sweet and touched with a faint, molasses-y bitterness. A pinch of salt enhances the impact of dark-chocolate chunks that resemble the buttery ganache core of a truffle. These confections are so intense it's like an entire chocolate cake condensed into a cookie. There may not be a better cookie on Earth, including those Elvis cookies with the peanut butter, banana, and bacon.
