"Hot" is a relative concept in Minnesota, both in outdoor temperature and spicy food. Although Runyon's hot wings will leave you with a tingling sensation, it's not quite scalding enough to trigger a cascade of endorphins. What Runyon's gets right—and other wing purveyors so often get wrong—is the consistency of the sauce. A good Buffalo sauce should be runny like vinegar, not creamy.
