We see no reason to stray from the classic Reuben: corned beef, melted Swiss, and kraut, topped with a sour-cream sauce on dark rye. But if you opt for the "Spicy Reuben" (hot pastrami, pepper cheese, and spicy mustard) or the "Russian Reuben" (pastrami, Swiss, kraut, and Thousand Island dressing), you won't hear a peep out of us.
