Besides supplying beef to local restaurant powerhouses such as Table of Contents, they make a mean ham, gorgeous herb-and-garlic-rolled bacon, and you should see the sausage! The butchers draw from more than 90 sausage recipes, and on any given day you'll find 20-odd varieties, from Louisiana andouille to Portuguese linguiça, Armenian lamb-mint, and Minnesotan smoked pork and wild rice with jalapeño cheese. Because their farm community has changed so thoroughly, it looks like Forster's is going to have to move in a couple of years.
