The crew at Wild Mind Artisan Ales have turned a commercial car wash in south Minneapolis’ industrial beehive into an oasis. Pull up a boulder on their manicured lawn or split a food truck empanada with your basenji in the shade of their picnic umbrellas. Inside is a sprawling but cozy communal space where you can even look into brewer Mat Waddell’s fermentory and see what spontaneous madness he’s cooking up in his coolship. And Waddell actually cultures some of his yeast from microbes in the air, which makes Wild Mind the only taproom where you can literally taste the neighborhood.
