Kyatchi's menu of sustainable sushi and hot dogs seems like a head-scratcher. But the Japanese love hot dogs, and so the combo makes perfect sense. The mashups continue from there. The Yakisoba Dog is a locally made Limousin beef hot dog resting beneath a tangle of stir-fried soba noodles and topped with onion, red ginger, and Japanese mayo. The noodles are the real star of this circus: Messy, slippery, umami-rich, they turn an ordinary hot dog into the object of beatific odes. Of course, the dog wouldn't be anything at all without Kyatchi's strict adherence to quality meat, an all-beef, snaps-when-you-bite craftsman product. It's as luxe as tube meat has any business being.
