We haven't seen another butcher shop quite like this one. The walk-in cooler is enclosed in glass, for a clear view of what you're actually getting. Every week, a whole cow, hog, goat, and lamb are delivered and broken down into everything from pork chops to kidneys to sweetbreads. Most of the butchers also have a chef's background, so they know just what to do with all of this meaty bounty, turning it into pâté, whitefish salad, bolognese, lard, the best sandwiches in town, blood sausage, liver mousse, and more. The animals are all sourced from local farms, and treated with the utmost care care and respect. Chances are high that these creatures had only one bad day — and that tastes a hell of a lot better than the alternative.
