Downtown paper pushers and local brewery denizens know Chef Shack well. They know that the women behind this truck are to thank for their quick and easy lunch that's far superior to skyway fast-food options, or their nosh that soaks up more suds than a bag of chips. Lisa Carlson and Carrie Summer were pioneers in the food truck movement in the Twin Cities, paving the way for the bounty to come. The restaurant-trained chefs started at the Mill City Farmers Market selling, among other things, their signature Indian-spiced mini doughnuts. The pair now have two brick-and-mortar locations, one in Minneapolis and one in Wisconsin. But you'll still see the familiar red truck bopping around town, vending mini doughnuts to happily waiting fans.
