Enjoying the refined elegance of brunch at Burch, you may have to check your calendar and watch to confirm that it is in fact Sunday morning, and you are not, in fact, at a sophisticated weekend dinner. Here, old favorites become elevated: A croque madame is mounted with lobster; the brunch burger is pattied with famed Wagyu beef; and one of the many Bloody Mary iterations gets a smoky shot of Mezcal. Even the ubiquitous bagel with smoked salmon gets a homemade bagel. The whole of it is like brunch grabbed its clutch purse and pearls and decided to step out, and step up. It's only a shame these elegant dishes are relegated to but four hours per week, 10 a.m. to 2 p.m. Sundays only. Bust out that calendar again, and draw a big red "X." Set an alarm. Sunday morning is now an event.
