Although we may be a plane ride away from any oceans, there is no better way to enjoy that briney bounty than perched at the raw bar at Sea Change. Raw oysters are perfectly presented, quivering atop their shells, ever-so-delicately adorned with a splash of lemon juice. Langoustines are splayed upon the plate, splashed with scalding olive oil and an enticing bit of chile pepper. Who knew that shaved abalone could be even better with a touch of unctuous bone marrow, grassy asparagus, and a tart spray of uzu? These guys did. Take a friend from the coasts out for dinner at Sea Change, because otherwise they'll never believe that we have one of the best seafood restaurants in the country — and it's ours, all ours.
