Until someone opens a proper Spanish tapas bar in the Twin Cities, we'll have to settle for the appetizer menu at Giorgio's on Lake. Not that you'll feel like you're settling when you stop by on a warm spring afternoon to enjoy a glass of Gave and a selection of some 20 delectable starters ranging from the basic (roasted garlic, caponata) to the daring (rosticciana pork ribs in a dried-fruit sauce). Everything is fresh and seasonal, and if a dish errs on the side of stretching the appetizer paradigm--well, a restaurant shouldn't get punished too harshly for experimenting. With more salons per capita in Uptown than anywhere in Minnesota, the poseur, er, people-watching at Giorgio's is excellent as well. Who knows? You might even get discovered as a hair model.
