Okay, who cut the cheese? Some call it stink, we call it a beautiful pungency. This Saturday, join cheese fans of all stripes for the second-annual celebration of the funky milk. Here, the Minnesota State Fairgrounds' International Bazaar will be overrun by cheese and the folks to who love to slice it. The festival's first year had some cheese makers bum-rushed for samples. Thankfully, this year's separate sessions should make it easy for everyone to sample all the different varieties on hand. Cheese makers featured include a veritable who's who of the deli case — Alemar Cheese Company, Castle Rock Creamery, Caves of Fairbault, Comstock Creamery, Redhead Creamery, Shepard's Way, Singing Hills — so there should be a good mix of cheeses you've seen and varieties you've never tasted before. There will also be other delicious foods from vendors like Foxy Falafel, Aames Honey, HeathGlen, the Salty Tart, and the Moral Omnivore truck. Be sure to take in a few talks and demonstrations, where you can learn about dairy farming, pairing cheese with wine and beer, cooking with cheese, and making mozzarella.
