MATT'S BAR
3500 Cedar Ave. S., Minneapolis
612.722.7072
www.mattsbar.com
Matt's Jucy Lucy flies in the face of most "best burger" criteria: The patties are plain, the bun's kind of smooshy, and it's stuffed with American, the worst of all cheeses. But something magic happens when that plastic yellow crap is heated as hot as the sun: In liquid form, it tastes delicious. The gooey goodness melts into the bun and the meat and evokes the same bland, dense, comfort of Hamburger Helper. Just take care when unleashing the Lucy's volcanic explosion of lava-like cheese.

DAKOTA JAZZ CLUB & RESTAURANT
1010 Nicollet Mall, Minneapolis
612.332.1010
www.dakotacooks.com
If the Dakota's cheeseburger swings like a jazz standard, its Cobb salad version is an inspired riff. Both burgers feature a thick, peppery patty that tastes home-grilled, tucked into a flour-dusted, Italian-style bun. Top it with bacon, avocado, blue cheese, and hard-cooked egg—or keep it simple with a slice of sharp cheddar and dollhouse-cute condiments of diced raw onions, a bright pico de gallo, and cornichons served in a lettuce cup. For a crunchy texture, add a handful of garlicky, fried potato matchsticks.
CONVENTION GRILL
3912 Sunnyside Rd., Edina,
952.920.6881
Since 1934, this chrome-accented classic has been introducing Edina kids to their inaugural burger and fries. The grill's offerings are utterly conventional—the basic burger is sizzled to a crisp and blessedly unadorned—which is exactly why local families have been frequenting the place for decades, reveling in its milkshake-thick nostalgia.
THE BULLDOG NE
401 E. Hennepin Ave., Minneapolis
612.378.2855
www.thebulldogmpls.com
The Bulldog was one of the Twin Cities' pioneering gastro-bars, a place launched by earnest young chefs hell-bent on elevating casual fare. The bar built its reputation on its singular Junk Burger, made with Wagyu beef that was house-cured, double-ground, and rested in a butter sauce before being served with lettuce, tomato, onion, cheese, bacon, mushrooms, and roasted garlic aioli. The substantial patty is as wide as a bike tire and so robustly flavored that you'd never even think to add ketchup.
BAR LURCAT
1624 Harmon Pl., Minneapolis

www.damico.com
Ever seen the recipe for Lurcat's mini-burgers? Egads! They mix a half-pound of butter into every two pounds of ground chuck. No wonder the things are so succulent. Tucked into mini potato rolls and topped with red-wine shallot butter, these lip-smacking cuties are a favorite drinkers' snack.
TOWN TALK DINER
2707 1/2 E. Lake St., Minneapolis
612.722.1312
Burgers at this reincarnated 1940s diner arrive with a steak knife stabbed straight through the heart, as if to warn diners that the kitchen's not messing around. Town Talk serves an everything-on-it Kitchen Sink Burger, a corned beef Reuben-style burger, and perhaps best of all, the Brat Burger. The spiced sausage patty is covered with Gruyere cheese, bacon, fiery sauerkraut, and enough attitude to get people talking.
BARBETTE
1600 W. Lake St., Minneapolis
612.827.5710
www.barbette.com
Barbette's Frenchified burger, the Royale with Cheese, consists of a fatty patty slid into a chewy, crusted, baguette-like bun with a slab of Brie and the caramelized beginnings of French onion soup. The luscious beef is infused with spicy, wine-like notes, and its charred edges take on the character of breakfast sausage. Here's how you eat like a king.
