TOFU: Shhhh...Your Kids Just Might Love It

I'M NOT KIDDING. I'm going to tell you two great summer ways to eat tofu, and if your kids don't like it, I'll eat my words. Both recipes call for Mori-Nu brand silken tofu, in the little cardboard boxes. You should be able to find Mori-Nu at Rainbow Foods, Whole Foods Market, or any co-op. Each recipe takes less than five minutes to prepare.

Recipe One: Strawberry-Banana Smoothie

1 10.5 oz. package Mori-Nu Lite Silken Tofu (soft)
10 oz. frozen strawberries
1 ripe banana

Throw it all in a high-speed blender or food processor, and let it run for three minutes or so until the mixture is absolutely smooth. You might want to add a few drops of maple syrup if your kids have very sweet teeth and the strawberries are unsweetened (which they should be because they'll be better tasting that way). When it's creamy, smooth, and delicious looking, take it out and scoop it into cups. Serve it with a straw and a spoon and a strawberry on top, and give everyone as many seconds as they want. It's as good for them as any food can be. (about five fair servings)

(And double shhhh: if you lose or forget this simple recipe before you've memorized it for good, you can sometimes find it on the Mori-Nu box. I don't think they'll mind my telling you that.)

Recipe Two: World's Best Chocolate Pudding

1 10.5 oz. package Mori-Nu Lite Silken Tofu (firm)
1/3 cup unsweetened cocoa powder
2/3 cup raw cane sugar
2 teaspoons vanilla extract
tiny pinch of salt

Put it all in the blender or food processor and blend on high speed until absolutely smooth (at least two or three minutes). Put it into a serving container or individual serving dishes and chill. Serve cold. Yum, yum. (yield: 1 1/2 cups)
